Gluten-Free open-faced BLT

After Saturday morning coffee and chats with the MVP we stared at each other...starving.


A starving pregnant lady is no joke.


With an empty fridge it left little options...


Of course, he wanted an egg and sausage burritos from McDonald's.


YUCK.


I wanted a...BLT!


Yes, for breakfast!


So without brushing our teeth or combing our hair we were off.


And to both our delight we LOVED our BLTs!


His was traditional, mine had to be modified, as always.

Gluten-Free open-faced HEALTHY BLT:


One corn tortilla (toasted)


Turkey Bacon


Feta cheese (just a few sprinkles)


Avocado


Tomato


Romaine lettuce


Mayonnaise


(you could use greek yogurt but I opted for a smaller amount of the GOOD STUFF)


Sea Salt


Pepper


Use a fork and knife to eat...its messy!
