#31day October Writing Challenge >>> Day 23!

Howdy!

Remember the yummy PESTO I recently posted on??? I made a healthy and delicious entree using the tasty pesto...

Chicken Pesto with Feta




Ingredients:

Chicken Tenderloins
Coconut oil (or olive oil)
Tomato
Feta Cheese
Brown Rice
Sea Salt
Pepper

Directions:

Preheat oven to 400 degrees. 
In baggie, shake chicken with a little coconut oil, salt, and pepper.
Put a teaspoon of pesto on each tenderloin. 
Bake for 20-25 min (until no pink in middle).
Remove from oven and top chicken with tomato and feta.
Bake for 5 min. 
Serve hot over brown rice. 
Use extra pesto for rice!
