Fall Snacking...

While preparing iiley's butternut squash this weekend, I was sampling!

I've never steamed butternut squash...and OH BOY it's delish!!!

Seriously, it's a good thing little babe is a good sharer because I kept almost half the squash for myself. 

Why am I JUST NOW steaming yummy veggies?

It is tasty alone but even better with my new little concoction. I pretty much always have cooked quinoa ready to throw into ANY meal. It's a protein but tastes and feels like a carb...making me more satisfied! So what goes well with squash and quinoa? APPLES!!!

AHEM. 

Butternut, apple, and quinoa snack-a-roo!



Ingredients:

REAL butter
1/2 thinly sliced honeycrisp apple
steamed butternut squash in cubes
1/2 cup cooked quinoa
cinnamon
sugar
honey

Directions:
In a pan, saute apples until soft. Sprinkle with cinnamon and sugar (as much as you desire). Add squash and quinoa to heat. Once everything is warmed remove from heat, pour in bowl, and drizzle with honey. ENJOY!

To be healthier I used REAL butter, not fake crappy butter. Also, I only sprinkled sugar and drizzled honey. You could substitute sugar for stevia and agave nectar for honey. It's not the healthiest snack I've ever eaten, but really, it's not bad! 

Apples- CARB
Quinoa- PROTEIN
Squash-VEGGIE

A little real butter and real sugar ain't gonna hurt nobody!
(well, in my opinion!) 
And YOU GUYS, it's sooooo tasty!

OH! Of course, this is GLUTEN-FREE, as always.

Two thumbs up for fall snacking!
