Quinoa Bowls!

I get asked A LOT about gluten-free meals...Here's one answer! 

Quinoa and I? We're PALS. 
Best pals. 

For those who are saying: Qwa-no-ah, you're wrong. 

It's keen-wa. 
(don't feel bad, I totally butchered it at first, too)

If I wasn't gluten-free, I probably would have never discovered quinoa...what a SHAME that would be!

If you don't include quinoa to your diet, your taste buds are being totally gypped. 
Not only your taste buds but your BODY!

Did you know that quinoa is one of the most protein rich foods? 

Get this. 

It's a seed. 
Super high in fiber and amino acids.'s YUMMY. 

You don't have to be gluten-free to eat it, y'all. I'm telling you, you are wasting your time (and calories!) on white pastas and rice (even the brown and whole wheat in my opinion!) 

So...not that you asked but I'm going to tell you anyway!

I cook a LARGE batch of quinoa every single week. I buy the large bag from Costco and cook it in low-sodium gluten-free chicken broth. I store it in tupperware and use it ALL WEEK! 

Tonight I was in a rush and exhausted but still wanted to eat healthy. Thanks to my handy-dandy pre-cooked quinoa I had nothing to fret! 
(and my pre-grilled this spring weather!)

I make all sorts of meals with quinoa; this is just one of MANY. 


Pre-grilled veggies
Pre-made quinoa 
cherry tomatos
gf roasted red pepper and spinach sausage (from freakin' yum)


Saute diced sausage and kale in butter. (sheesh, don't gasp too loud over there! Yes, I use butter!)
Add about 1/4 cup quinoa 
Add LOTS of cut veggies
Once hot (and you can't wait any longer because it smells so yummy), pour in bowl. 
Top with feta, tomato, and cilantro. 

(guilt free, of course because it's super green yet filling!)

I'm not trying to toot my horn over here, but I totally am. It's just really delicious, easy, and healthy so it's share-worthy. 

So don't get all judgy on me!
