Healthy eats...Battling EGG-haustion!


Get it?  Egg-haustion? 
If you're like me, you probably are well aware of the term HANGRY
hungry + angry = HANGRY
It's nothin' to be proud of, but it sure does exist!
It usually happens around 2 or 3 in the afternoon when I'm running low on patience and energy.
I've come up with a new solution, that will make you (and others!) muchhhh more peaceful.
Drum roll, please...
Introducing...Guacamole Eggs!






Usually I skip the deviled eggs at the party because the fat in the yolks scares me. I can't even begin to tell you the amount of energy after eating HEALTHY fats (and a lot of them!). Although I am NOT paleo, I really really really like how I feel when I eat paleo meals. Yep, you guessed it! This snack is paleo AND gluten-free. 

Ingredients: 
6 Hard boiled eggs
1 avocado
sea salt
pepper
garlic (or garlic powder)
fresh cilantro
fresh onion (about 1/4 of a medium onion)
cayenne pepper
lime juice
olive oil

Directions: 
Peel the eggs. Cut them in half. Remove the hard-boiled yolks and place in blender (I use my nutri-bullet!). Add 1 or 2 avocado, your choice. Taste to your liking with garlic, salt, pepper, lime juice and cayenne pepper. Add onion and cilantro. Add a little less than 1 tablespoon of oil (it helps it blend). Blend until it's a thick and delicious tasting mush. Add it to the half-eggs and garnish with fresh cilantro and cayenne pepper!
I made these for MVP to take to work because he can chow down a few in a few minutes. Super yum, super energizing, and cures my hangriness.
